Caramel and pecans are delicious together - like the flavors of pecan pie. Dulce de leche is a caramel-flavored milk candy/sauce made from milk that is slowly condensed with sugar, until it's thick and caramel-colored. It has a very creamy texture and butterscotch-like flavor that makes it a natural choice for fudge. Stir chocolate chips into the fudge while it's hot if you like chocolate fudge, or simply sprinkle them on top.

Roast pecans, stirring every 5 minutes or so, until brown and fragrant (about 20 minutes). Let cool, and coarsely chop. Line an 8x8 pan with foil, and butter foil generously. Melt the butter in a saucepan. Stir in the brown sugar, milk, and a pinch of salt. Bring mixture to a boil, and boil for 2-3 minutes. Remove from heat and stir in the dulce de leche and the vanilla until well mixed. Stir in the powdered sugar, and the chopped pecans, reserving 1/4 cup of the pecans to sprinkle on top of fudge. Pour fudge mixture into prepared pan, and sprinkle with reserved chopped pecans and chocolate chips if desired. Let fudge cool thoroughly in the refrigerator, then cut into squares.
