                                                                  A really special friend shared this recipe with me several years ago. It was his trick for dressing up those inexpensive noodles for his kids, and I think it is very good. This is great on its own as a quick meal, but can be an easy side for many dishes. We prefer the chicken or beef flavored noodles for this.

                                                                  • Bring water to boil in a small sauce pan.

                                                                  • If your tastes desire, you may not use all of the seasoning packet.

                                                                  This is an easy casserole and very quick to make. This recipe can easily be increased for a last minute get together. Add a salad and you have a great dinner.

                                                                  I cooked these patties for a Fund Raiser and served over 260 persons, both young and mature. They were a tremendously big hit with all.

                                                                  • Press together and flatten to about 3 1/2" in diameter or use a mold.
                                                                  • The patties should be about 3/4" thick.
                                                                  • Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
                                                                  • In a frying pan over medium-high heat, heat olive oil.
                                                                  • Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close.
                                                                  • Turn patty over and continue to fry for about 2 to 3 minutes.
                                                                  • The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
                                                                  • Check for doneness to make sure there is no pink showing.
                                                                  • NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend.
                                                                  • Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
                                                                  • A slice of Swiss cheese layered on the burger patty is great.
                                                                  • A pickle of your choice adds an additional touch.
                                                                  • Fry some mushrooms and spread some over the top of the bun.
                                                                  • Fried caramalized onions are a good added touch.

                                                                  I make this almost everyday for an after college snack. It's soooo tasty. I cook the noodles a little different than most people so these noodles do have a strong flavor. Of course most any package of Ramen Noodles will work, but I prefer the texture of "Maruchan" Ramen Noodles.

                                                                  • Pour 1 cup water in a pan.
                                                                  • Put noodles in water.
                                                                  • Set noodles and water to boiling.
                                                                  • Once noodles have broken up rip the ham in little bite size pieces and place over the noodles.
                                                                  • Just before too much water evaporates remove from stove. I like just about a tablespoon of water leftover.
                                                                  • Add seasoning packet and stir around well.
                                                                  • Top with cheese, let melt and enjoy!

Put noodle mixture and hamburger mixture into casserole dish. For topping, melt about 1 tablespoons butter in skillet. Cut bread to crouton size and stir into butter. Put over noodle mixture. Bake in 350 degree oven for 45 minutes or until topping is brown. When making this I often double recipe and put one casserole in oven and one in freezer.

                                                                  • MAKE THE BROTH: In a large stockpot, combine the chicken, ribs, leek, ginger, garlic, water and shoyu. Bring to a boil.
                                                                  • Meanwhile, in a skillet, heat the oil. Season the pork butt with salt and brown it well on all sides over high heat, 12 minutes; transfer to the stockpot. Simmer the broth over moderately low heat for 2 hours, until the pork butt and ribs are just tender; skim any scum that rises to the surface. Transfer the pork butt and ribs to a platter and refrigerate. Strain the broth and discard the remaining solids.
                                                                  • Return the broth to the pot. Add the kombu and simmer over moderately low heat for 1 hour and 30 minutes. Let cool, then chill and refrigerate the broth overnight.
                                                                  • THE NEXT DAY, PREPARE THE RAMEN: Preheat the broiler. Skim the fat off of the broth and discard the kombu. Bring the broth to a simmer. Season with shoyu and keep hot.
                                                                  • Untie the pork butt and slice it across the grain 1/3 inch thick. Cut the ribs between the bones. Arrange the pork slices and ribs on a large baking sheet and brush with shoyu. Broil 8 inches from the heat for 3 minutes, turning once, until the meat is crisp; keep warm.
                                                                  • Divide the cooked noodles among 8 bowls and ladle 1 1/2 cups of broth into each one. Add the spinach in piles. Drain the eggs, cut each one in half lengthwise and set a half in each bowl. Arrange 2 slices of pork butt and 1 rib in each bowl and garnish with the scallions and nori. Serve the ramen immediately, passing the rice vinegar and togarashi at the table.

Pour warm water in the skillet. Season with chicken bouillon powder, sugar, and soy sauce and bring the soup to a boil. Turn down the heat to low, and melt miso in the soup. Add sesame oil at last. Stop the heat. In the meantime, boil lots of water in a large pot. Put Chukamen noodles in the boiling water and cook for a few minutes, or boil noodles, following the package instruction. Drain the noodles and serve into two noodle bowls. Pour hot miso soup over the noodles with ingredients on top. *Makes 2 servings

                                                                  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment-lined baking sheet. Spread the meat out and season it generously with salt and pepper.

If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.

The broth is also an important ingredient in shoyu ramen.

                                                                  • Put a large pot of salted water (1 teaspoon salt for every quart of water) on to heat, for the pasta.
                                                                  • Heat a large sauté pan on medium high heat. Melt 1 teaspoon butter in the pan and swirl it around. Sprinkle the bottom of the pan generously with salt. Working in batches as not to crowd the meat (crowding it will make it hard to brown), break up the ground beef and add it to the pan. Sprinkle the meat with salt. Do not stir the meat, as stirring will prevent browning. Once the meat is well browned on one side (a couple minutes, depending on how hot the pan), use tongs or a fork or a metal spatula to flip to the other side. Once that side is browned as well, use a slotted spoon to remove from the pan and set aside. Continue to brown the meat in batches, adding a teaspoon of butter to the pan with each batch if needed, and salting the pan and the meat, until it is all browned. Remove meat from pan. Drain excess fat from pan.
                                                                  • Lower the heat to medium. Add the onions to the pan. If you are working with very lean meat, you may not have any residual fat in the pan. If this is the case, you'll want to add in a tablespoon of olive oil or butter to the pan. Cook the onions, scraping up the meat drippings, until soft, about 5 minutes. Remove onions from the pan (add to the meat).
                                                                  • Depending on the cooking times of your particular brand of pasta, this is likely a good time to add the pasta to the (should be now) boiling, salted water.
                                                                  • While the pasta is cooking, add a tablespoon of butter to the pan, increase the heat to medium high. Add the sliced mushrooms. Sauté until nicely browned (about 4 minutes). Add the sherry (or dry white wine or water) to the pan to deglaze the pan, scraping up any browned bits. Let the sherry reduce by at least a half, then lower the heat to low.
                                                                  • Remove the pan from the heat. Mix in the sour cream and paprika until smooth. Return the pan to very low heat, and not let the sour cream boil (or it may curdle). You may add a few tablespoons of water to the mixture to thin it out a bit at any time. Stir in the lemon juice, and about 1/4-1/2 teaspoon of salt (taste). Stir in the meat and onions. Stir in the chopped parsley. Add more salt, pepper, and/or paprika to taste.
                                                                  • Keep the stroganoff on warm heat until the noodles are done cooking. When the noodles are ready (al dente) drain.
