Sweet honeydew gets the star treatment in this version of a South Korean ice-pop favorite, the Melona bar. No artificial flavors here; ripe melon is blended and then drained of excess liquid to intensify the fruit flavor, before the cream and sugar are added. Special equipment: You will need freezer pop molds for this recipe. We used these molds, but any kind will work. If yours don’t come with sticks that attach securely, you can buy wooden sticks and insert them 1 hour into the freezing time. What to buy: If you purchase precut honeydew, you will need about 2 1/2 pounds. This recipe was featured as part of our 7 Ice Pops That Break the Mold.

Pour through the strainer and let sit until the excess juice has drained, about 5 minutes. Discard the excess juice, or reserve for another use.
                                                                  • Transfer the drained melon purée to a medium bowl, add the sugar, and whisk until the sugar has dissolved. Add the cream and whisk until just combined. Divide the mixture among the pop molds and freeze until solid, at least 6 hours.

                                                                  Ingredients

                                                                  • Yes No a 2 lb a little sugar, granulated
                                                                  • Yes No 2 lemon
                                                                  • Yes No 24 almond
                                                                  • Dice the melons; if the flesh that was near the rind is hard, blanch it for 2 minutes. Next, combine sugar, lemon juice, and diced melon in a bowl and let the mixture sit for a couple of hours. Transfer the mixture to a pot and simmer it for 50 minutes over a medium flame, stirring occasionally and removing the foam that rises to the surface with a slotted spoon or strainer. In the meantime, heat your oven to 240 F (120 C) and heat the jars and their lids for 10 minutes. 5 minutes before the cooking time is up for the jam, stir in the almonds. When the time is up, fill the hot jars, screw the lids on, upend them, and let them cool.

Boil until sugar is dissolved, and boil an additional 3 minutes. Remove from heat to cool. Combine honeydew, cooled syrup, and lemon juice in a blender container; blend until smooth. Pour mixture into an airtight container; chill for 2 to 4 hours or overnight. About 2 to 3 hours before serving, stir honeydew mixture well, and pour into a 13- x 9- x 2-inch pan. Freeze mixture for 2 to 3 hours or until frozen but not solidified, stirring every 30 minutes. Scrape granita with a fork to separate the crystals. Serve honeydew granita in chilled containers. You'll use about half of the melon for this recipe and the rest in Sunday's fruit salad. If you don't think your rental place will have a blender, whir these up before you leave town, and freeze overnight in a zip-top plastic freezer bag. Thaw for a few minutes before serving (knead the bag to break up big pieces). If you brought extra orange liqueur, add a splash to the mix for more flavor.

Sometimes the drink is extended by adding water and sugar, which is less expensive than fresh fruit. For me, less is more. I prefer having a smaller portion of the good stuff (real fruit juice), served over crushed ice.

Pour through a fine sieve lined with dampened cheesecloth into a bowl. Let drain, undisturbed, 30 minutes, then discard foam remaining in cheesecloth.
                                                                  • Sprinkle gelatin over water in a small saucepan and let soften 1 minute. Add 2 tablespoons melon juice and sugar, then cook over low heat, stirring, until gelatin and sugar are dissolved, 1 to 2 minutes. Gradually whisk in 1 1/8 cups melon juice (reserve remainder for another use if desired), then transfer to a bowl and chill, covered, at least 8 hours. (Honeydew water will be barely set.)

A cap of luminous, icy, cucumber-flavored granita, even paler green if that’s possible, completes a look that is about as debonair as a milkshake can be. The high water content of honeydew gives this shake a slightly thinner and even more slurpable consistency than most of the others. Use any type of cucumber you wish for the granita.

                                                                  • Yes No 6 1 1/2 pint, 18 oz, 510 gram medium original vanilla ice cream
                                                                  • For the granita:
                                                                  • Bring the sugar and water to a gentle boil in a small saucepan over medium-high heat, swirling the pan to dissolve the sugar; reduce the heat to medium and simmer for 2 minutes. Off the heat, cool the syrup to room temperature. Place the syrup, salt, 2 teaspoons of the lime juice, and the cucumber in a blender and puree until smooth. Pour the cucumber mixture into a shallow container. Cover and freeze until softly frozen (not solid), 2 to 3 hours. Remove from the freezer and gently run a dinner fork through the frozen mass to break it down into loose, icy crystals. Cover the container and return it to the freezer. Freeze until firm, checking and raking the granita with the fork every hour or two to keep the crystals loose and fine, at least 7 hours.
                                                                  • For the shake:
                                                                  • Place 1/4 cup (about 2 ounces/70 grams) of granita, the honeydew, and the remaining 1 teaspoon of lime juice in a blender and blend to break down the honeydew completely, about 1 minute. Add the ice cream and pulse several times to begin breaking it up. With the blender motor off, use a flexible spatula to mash the mixture down onto the blender blades. Continue pulsing, stopping, and mashing until the mixture is well blended, thick, and moves easily in the blender jar, roughly 30 to 90 seconds. Pour into a chilled glass or glasses, top each with 1/4 cup (about 2 ounces/70 grams) granita, and serve at once.
