                                                                  Jam-filled cookies are on everyone's favorites list, but did you know that they were this easy to make? Because they are "refrigerator" cookies you can choose your time for baking. This recipe makes a large amount, so you can fill all those Christmas gift plates easily. Makes 6 dozen cookies.

                                                                  Ingredients
                                                                  • Yes No 1 3/4 400 gram cup butter
                                                                  • Yes No 2/3 140 gram cup sugar, granulated
                                                                  • Yes No 1 egg yolk
                                                                  • Yes No 1/4 tsp fiori di sicilia from king arthur
                                                                  • Yes No 4 1/4 cup flour
                                                                  • Yes No 1 cup flaked coconut
                                                                  • Yes No 1 cup red jelly
                                                                  • Cream butter and sugar. Mix in egg yolk and any flavoring you want, such as a little vanilla, rum flavor, almond flavor or Fiori di Sicilia, an Italian pastry flavor sold by King Arthur Flour.
                                                                  • Mix in flour until a stiff dough forms.
                                                                  • Form the dough into a ball, wrap it in plastic wrap and chill 6 hours or more (preferably overnight) to let the sugar crystals dissolve in the dough.
                                                                  • Roll dough into 3/4 inch logs. Cover and chill again, if necessary.
                                                                  • Cut 1/2 inch sections of the logs. Roll in coconut, place on cookie sheet. Make an imprint in the cookie with a spoon handle or thumb.
                                                                  • Stir the jelly until it's smooth. Using 2 small spoons, drop a little jelly in each indentation. Do not overfill your indentation or the jelly will overflow and burn on the cookie sheet.
                                                                  • Bake at 350°F for 12 to 15 minutes or until lightly browned.
                                                                  • Once cooled, store at room temperature in a cookie tin. These cookies will keep for a few weeks.
